Zucchini Boats

This has been a go to lunch item for me lately.  Quick and easy and DeLiCiOuS!


This recipe is for one person..two boats. 


1 Green Zucchini
3-4 Grape Tomatoes
Bread Crumbs
Water
Olive Oil
Garlic Salt/Powder
Salt
Pepper
Mozzarella Cheese


First: cut your zucchini in half lengthwise (I then cut off the ends...I don't like ends of foods for some odd reason). Then scoop out the seeds leaving a nice boat looking shape.


Second: place zucchini in an oven safe dish with enough water to cover the bottom of the dish.


Third: mix a little olive oil, garlic powder/salt (whichever you prefer), salt, and pepper in a small bowl.  Only make enough to drizzle over the top of your zucchini. 


Fourth: drizzle olive oil  mixture on the top of your zucchini.


Fifth: cut grape tomatoes in half. 


Sixth: top zucchini with halved grape tomatoes, and bread crumbs.


Bake at 350 for about 30 minutes.


Take out and drizzle with a little more olive oil, mozzarella, and stick in the oven on broil for about 5 minutes.
